Apple Fritters with Bourbon Honey Glaze GF, SF, & Vegan

Yields:                           12 people

 

Ingredients: 

1/2 cup almond or coconut milk
1 package yeast
4 cups of flour
8 dates
1 cup cashews
2 tbsp honey
1/2 tsp salt
1/2 cup coconut oil
1 organic apple, diced
1/2 cup raisins
1/4 cup bourbon
1 tbsp cinnamon
2 cups vegetable oil

Glaze-
1/4 cup honey
2 tbsp bourbon
1/2 tsp cinnamon
pinch of ground nutmeg

 

Directions: 

Dough-

Place the cashews in a 2 cup measuring cup along with dates and fill to the 2 cup mark with warm water. Warm the coconut milk and place in a large bowl, add the package of yeast and 1/2 cup flour, let sit for 30 minutes. In a Vitamix/blender grind the cashews, dates and water into a paste. Add the coconut oil, honey, salt and 1/2 cup of flour (this will cause it to clump and make it easier to get out). Transfer the mixture to a mixing bowl. Alternately mix in the yeast mix and the flour until you have a soft sticky dough. Place in a warm spot and let rise for 1 hour. Soak the raisins in the bourbon until soft aprox 30 minutes. Add the chopped apple and cinnamon, mix to coat evenly. Fold into the dough and let rise until it doubles in bulk this could be another 2 hours. 

Heat oil in a wok or heavy bottom pot to 360 degrees, make sure there is enough so that the fritters can slightly float. With a large spoon scoop the fritter dough and place in the oil. Cook until golden brown aprox 3 minutes and flip. Once cooked let the fritters drain on paper towls.

Glaze-

In a small mixing bowl place honey and whisk in the bourbon, cinnamon and nutmeg. When you are ready to serve drizzle the glaze over the top. Serve warm and enjoy.  

 

Notes:                If the oil isn't deep enough when you flip the fritter push it down to spread it out a bit.
