Blazing Brown Rice Chili

 

Prep time:                         10 minutes

Cooking time:                45 minutes

Yields:                           4 people

 

Ingredients: 

1 tbsp olive oil
1 small red onion, minced
2 chipotle chili's, soaked and minced
1 cup shitake or portobello, diced
1 cup med grain brown rice
3 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
1/2 tsp dried basil
3 cups cooked pinto beans drained
1 can organic crushed tomatoes
1 can organic fire-roasted diced tomatoes
2 cups low sodium V-8 or vegetable broth
1 cup of corn kernels
Finish it with a 1/4 cup of sherry

 

Directions: 

Heat oil in a large pot and add the onion, chipotle, mushroom, and rice. Cook for aprox 5 min or until the rice is fragrant. Add chili everything but the  corn and simmer for 40 minutes and add corn just to heat maybe another 2-5 min. Turn off heat, add sherry and serve.
