Dinosaur Kale Saute

Cooking time:     10 minutes

Yields:                         2 people

 

Ingredients: 

1 bunch of dinosaur kale, chopped
8-12 garlic scapes, minced
1 bunch scallions, minced
1 tbsp olive oil
sea salt and fresh pepper to taste

 

Directions: 

Heat the oil on medium heat in a pan. Saute the scapes in the oil about 7 minutes- until they are softened. Add the kale and scallions, stiring continuously, until kale is soft and deep green, about 3 more minutes. Add a sprinkle of salt and pepper. This is very good as is or topped with...

 

Savory sesame tahini sauce-

1/2 cup sesame tahini                           juice from one freshly squeezed lemon

1/4 cup extra virgin olive oil                  sea salt to taste (about 1/2 tsp)

dash of garlic powder                            pinch of dried thyme

Whisk all ingredients together in a bowl. Thin if needed with a little bit of water. This will keep in the fridge up to a week.
