Mashed Potatoes (vegan)

Cooking time:          25 minutes

Yields:                                 4 people

 

Ingredients: 

3 lbs of potatoes (aprox 12)
2 tsp sea salt
3 tbsp extra virgin olive oil
1/2 cup unflavored soymilk
1 tbsp lemon juice

 

Directions: 

Put potatoes in pot and cover with plenty of water. Add the 2 tsp of sea salt and bring to a boil. Then turn heat down to med and cook until the potatoes are easy to pierce with knife. Drain them, saving the cooking liquid. Return potatoes to the pot, add in the oil, soymilk, lemon juice, and 1/4 cup of the cooking liquid. Mash with a hand masher. Add more cooking liquid if you want creamier.

Notes: 

Season to taste with herbs and spices. In the fall I love to add a head of roasted garlic in the summer fresh herbs like basil, parsley or rosemary. Have fun with your food, it's creating a whole new body.
