Adzuki Bean Dip

Yields: 4 people
2 cups cooked adzuki beans
2 garlic cloves, peeled and smashed
1 tsp freshly grated ginger
2 tbsp sesame tahini
2 tbsp lemon juice
1 tbsp gluten-free miso
1 tbsp EVOO (extra virgin olive oil)
2 tbsp sesame seeds
2 scallions, finely chopped
Add all ingredients but the sesame seeds and the scallions to blender or Vitamix.
Blend until smooth. If mixture is too thick, add a little water.
Transfer dip to a serving bowl. Garnish with sesame seeds and scallions.
Serve with veggies, crackers, tortilla chips, or rice cakes.
