Black and White Turnips


Prep time:              10 minutes

Cooking time:     20 minutes

Yields:                         2 people



1 cup cooked black rice
1 cup hakurei turnips with greens
2 tbsp olive oil
1 small onion, chopped
2 garlic cloves, sliced
juice of 1/2 lemon
1 tbsp chopped parsley
pinch of chipotle powder


Preheat the oven to 425 degrees. Cut the turnip greens off and cut the turnips in 1/2. Place the turnips on aluminum foil and toss with 1 tbsp of olive oil, cook scut side down and cook for 10 minutes. Turn the turnips with tongs and cook for 5 more minutes or until they start to turn golden brown. Meanwhile in a sauté pan over medium heat sauté onions for 3 minutes then add the garlic and turnip greens and cook 2 more minutes or until the greens are wilted. Remove from the heat add the black rice, 1 tbsp olive oil, roasted turnips, lemon juice, parsley, and chipotle. Toss to coat and serve.
