Black Bean Salad

Yields:                                  4 people

 

Ingredients: 

2-15 oz of cooked black beans
1 red or yellow pepper, diced
1/2 cup red onion , diced
1-2 cups pint of cherry tomatoes (cut in 1/2)
1 tbsp of olive oil
1 tbsp of balsamic vinegar
1-2 tsp of ground cumin
1/2 avocado sliced for garnish

 

Directions: 

Mix all ingredients, except avocado, together in a bowl and chill for several hours. Garnish with avocado slices before serving.
