Cabbage Soup

 

Prep time:                  15 minutes

Cooking time:           50 minutes

Yields:                            6 people

 

Ingredients: 

1 head of cabbage
8 medium potatoes, chopped
1 onion, greens removed, chopped
1 10oz package of mushrooms, chopped
1 14 oz can of coconut milk
1 summer squash, chopped
3-4 carrots, chopped
4 cloves garlic, peeled and chopped
5 swiss chard leaves, chopped
pinch of dried thyme
several basil leaves, chopped fine

 

Directions: 

Put all ingredients in a large pot. Refill the coconut milk can 3-4 times with water or stock and add to pot. You want all the veggies fully submerged in the broth. Bring to a boil on high heat and reduce to low. Let it simmer untouched for 40 minutes. Give it a stir then serve hot.
