Chicken Stew

Yields: 6 people
Ingredients:
2 skinless chicken breasts, chopped
1 tbsp olive oil
1 large onion, chopped
3 carrots, scrubbed and chopped
2 celery stalks, chopped
2 cloves garlic, finely chopped
1 can organic diced tomatoes
1 tbsp tomato paste
3 cups low sodium chicken broth
1 tsp dried basil leaves
1 bay leaf
2 cups white cannellini beans
Directions:
Heat oil in a large heavy pot on medium high heat. Brown chicken and remove should only take 2-3 minutes place in bowl and refrigerate. Meanwhile, add onion, carrots, celery and garlic. Cook, stirring occasionally until onion starts to turn golden, 6-8 min.
Stir in tomatoes with juices, tomato paste, broth, basil and bay leaf. Reduce heat to medium low and simmer for 25 minutes.
Add beans and chicken, simmer until liquid has thickened, approximately 10-15 min. Discard bay leaf and serve.
