Chipotle Lime Black Bean Soup

Cooking time:           10 minutes

Yields:                               2 people

 

Ingredients: 

1 onion, chopped
2 cloves of garlic, diced
1 tbsp oil 1 cup cooked black beans
1 1/2 cups chicken broth
1 cup cooked rice
1 cup cooked diced chicken
2 tbsp tomato sauce
1 tsp dried cilantro
1/4 tsp chipotle or cayenne powder

juice of 1 a lime
1 scallion sliced thinly

 

Directions: 

This is a great quick meal to use your left overs or when you don't feel like cooking. 

In a heavy pot over medium high heat saute the onions and garlic in oil for about 3 minutes or until translucent. Add the beans and broth. With the back of a spoon smash some of the beans so the soup gets a bit thick. Add the rice, chicken, tomato sauce, cilantro, and chipotle and cook until the soup begins to simmer 5-7 minutes. Add the lime juice and garnish with the scallion before serving. 

Serve with red corn chips.
