Chocolate Chai Tapioca Pudding

Prep notes:                        Soak tapioca pearls overnight.

Cooking time:                10 minutes

Yields:                                    6 people

 

Ingredients: 

3/4 cup tapioca pearls
1 can coconut milk
1/8 tsp salt
1/4 cup honey
1/4 cup cocoa powder
Chai spice blend:
1 allspice berry
1 clove
6 grains of cardamom
1/2 tsp cinnamon
1 tsp ground ginger

 

Directions: 

Soak the tapioca the night before. 

Bring the tapioca, coconut milk and salt to a boil in a saucepan over medium-high heat, stirring constantly. Reduce heat to medium-low, and simmer for 5 minutes. Meanwhile in a grinder or mortar and pestle, grind the allspice, clove, and cardamom. Add the honey, cocoa, and all the spices to the tapioca. Cook until the pudding has thickened to a consistency of thick cake batter. Spoon into cups and let set in the refrigerator for at least 30 min. Serve with fresh fruit or chocolate shavings.
