Chocolate Chia Pudding

Yields:                                4 people



1/4 cup chia seeds
2 tbsp dutch process cocoa powder
3 tbsp Orgeat mix
1 cup unsweetened almond milk with coconut

Almond Marshmallow Creme:

1 cup almond milk
1 tbsp tapioca starch



Mix the chia seeds, cocoa powder and Orgeat in a mixing bowl making sure there are no lumps. Then add the almond mik and whisk, let the mixture set 5 minutes before stirring again. Stir occasionally over the next 20 minutes as it sets. Put into separate serving bowls, cover and put in the refrigerator for a few hours. Before serving you can top with a whipped nut cream or Almond Marshmallow Creme or you can make a parfait with all three. Be creative and enjoy this tasty treat. 


Almond Marshmallow Creme-

In a small sauce pan whisk the almond milk and tapioca over medium heat. Whisk continuously and within 5 minutes it will gell. Turn off heat an whisk a few more times as it cools.
