Confetti Slaw

Yields:                                  10 people



1 small head of cabbage
4 carrots
1/2 red bell pepper
1/4 onion, minced
1/2 cup pineapple, chopped
4 tbsp garlic aioli or mayonnaise
2 tbsp of white vinegar
1/2 tsp salt and pepper



Put the shred blade on the food processor. Add the first 3 ingredients shredding into a slaw. Pour into a bowl and fold in remaining ingredients. Let maserate in the fridge and stir occasionally. 

If you don't have a food processor I recommend julienning the vegetables. Coleslaw will keep in the fridge for close to two weeks.
