Cranberry Compote


Prep time:                       5 minutes

Cooking time:                     12 minutes

Yields:                                       4 people



1 lb cranberries

2 oz dates (aprox 8 dates)

1 cup apple cider 

Pinch each of allspice, nutmeg

1 allspice berry, ground 

3 cloves, ground

1/2 tsp ground cinnamon

1 Valencia orange, peel and juice

1 cup mandarin oranges 

1/2 cup nuts (I love hickory but pecans would work well too)



In sauce pan on medium cook dates in apple cider with spices for 10 min. Meanwhile zest orange and set aside. Cut orange in half, juice. Place juice and pulp in pan. Add zest and cranberries, bring to a boil and cook for 2 min. Remove from heat. Garnish with nuts. Serve over sweet potato, squash, pancakes or just as a compote. 

Note- this recipe works great with Autumn Olives as well.
