Crab Scampi with Kale Micro Greens

 

Prep time:                        10 minutes

Cooking time:                15 minutes

Yields:                                   4 people

 

Ingredients: 

1/3 box (4 oz) of penne pasta
2 cloves garlic, sliced
1 small onion, chopped
2 tbsp extra virgin olive oil
2 tbsp Italian seasoning
1 cup of white wine
2 oz of Parmesan cheese grated (the size of two dice)
1 tomato chopped
1/4 cup kale micro greens or any other micro greens

 

Directions: 

In a large pot boil water to cook penne pasta. Cook penne until al dente, about 6 minutes. Meanwhile in a heavy bottom sauce pan over medium low heat sweat the onions and garlic in olive oil. Cook until they start becoming translucent, 3 minutes. Add the Italian seasoning, white wine and Parmesan cheese, reduce heat to low and cook for 5 minutes. Shut off heat and add tomato and drained pasta and let sit for 3 minutes just so the cheese melts and the sauce begins to thicken. Add 3/4 of the micro greens and gently toss to coat. Plate and garnish the pasta with the remaining micro greens.
