Dad's Raw Almond Joy Balls

Yields:                         10 people

 

Ingredients: 

1/2 cup cashews
1/4 cup almond flour (or a ½ cup of raw almonds)
1 cup pitted dates
1 tablespoon coconut oil
1/4 cup raw cacao powder
1/4 teaspoon vanilla
1/4 teaspoon Himalayan salt
1 cup sweetened coconut flakes

 

Directions: 

Add all the ingredients to a blender, except the coconut, and blend well until a dough forms. You may need to scrape the sides occasionally to guarantee all ingredients are mixed thoroughly. Remove from the blender, sneak a couple tastes of the deliciousness for yourself, and roll dough into small balls. Roll each ball onto a plate with coconut flakes to give it that last, scrumptious touch. Place in the freezer for at least 30 minutes before serving. When storing, keep in the freezer. This made 20 balls.
