Early Spring Salad

Yields:                                 4 people

 

Ingredients: 

1 head of lettuce, chopped
2 cups spinach leaves, chopped
2 cups mesculun mix
4 hakurei turnips, sliced very thin
1/2 cup almonds
extra virgin oilve oil
fresh lemon juice
sea salt chopped scallions

 

Directions: 

In a large salad bowl combine greens, turnips and almonds. Drizzle with olive oil and lemon juice, and a sprinkle of sea salt. Toss well, top with scallions.
