Edamame Hummus


Prep time:                          5 minutes

Cooking time:                 5 minutes

Yields:                                  6 people



10 oz of edamame
10 oz peas
1/2 cup lemon juice
2 tsp minced garlic
1/4 tsp ground cumin
1/2 tsp ground coriander
3/4 cup EVOO
1/4 cup chopped cilantro
1/4 cup chopped mint
fresh ground pepper



Cook edamame 3-5 minutes then throw in the peas. Drain and shock in ice bath. Puree in Vitamix and stir in juice and next 3 ingredients. Gradually stir in 2/4 cup oil; mix well. Stir in 1/4 cup cilantro and mint. Season with salt and pepper.
