Fava and Greens

 

Prep time:                          8 minutes

Cooking time:              20 minutes

Yields:                                  2 people

 

Ingredients: 

1 cup fava beans, shelled
1 onion, sliced thinly
3 cloves garlic minced
1 tbsp olive oil
1 tsp dijon mustard (optional)
1 bunch kale, collards, or beet greens, chopped
sea salt to taste

 

Directions: 

In a large pan or soup pot, saute the onion and stems in olive oil on medium heat, about 10 minutes. Add remaining ingredients plus 1 tbsp water and cook, stirring continuously until beans and greens are soft, about 10 minutes.
