Fava Beans with Fettucine

 

Prep time:                        15 minutes

Cooking time:              20 minutes

Yields:                                  4 people

 

Ingredients: 

1 cup shelled fava beans
1-2 tbsp olive oil
1/2 cup chopped scallions
1 tsp dried thyme, or 1 tbsp fresh thyme
sea salt and fresh ground pepper
extra virgin olive oil
1 package fettucine, cooked and drained

 

Directions: 

First shell the fava beans- pull open the pods and take out the beans. Boil them 30 seconds in salted water. Shock in ice water. Use a knife to slit each bean on one side and squeeze to pop the bean out of their shells. Discard the peels.

Saute the scallions in oil in a skillet on medium heat, about 2 minutes. Add the fava beans plus enough water to cover everything. Bring to a boil, reduce to low, cover with a lid and cook for 15 minutes. Add pasta and herbs, toss well, season and drizzle with olive oil.
