Fresh Garlic Hummus

Yields:                          4 people



1 can or 2 cups cooked chickpeas, drained and rinsed well
3-6 cloves garlic, peeled
1/3 cup tahini (sesame seed paste)
1/3 cup olive oil
juice of one lemon (2 tbsp)
1/2 tsp sea salt
1/4- 1/2 cup water



Put garlic and chick peas in food Vitamix or food processor and grind until mushy. Add remaining ingredients, puree until very smooth. Use more or less water depending on how creamy you want it. Store in the fridge.


If you don't have tahini but you have sesame seeds grind them first with the olive oil or a little sesame oil. Then follow the rest of the recipe.
