Garlic Scape Pesto

Ingredients: 

10 garlic scapes, finely chopped
1/2 cup grated Parmesan
1/3 cup walnut, pignoli, pistachio or cashew nuts
About 1/2 cup olive oil
Sea salt

 

Directions: 

This is super easy. Add the scapes, parmesan, nuts and half the oil in a Vitamix and turn on for 30-45 seconds to grind. Then slowly drizzle the rest of the oil to blend the sauce to the desired consistancy. 

Serve over pasta, veggies or as a dip with pita bread, hummus and crudite.
