GF New England Clam Chowder

Yields: 16 people
Ingredients:
1/3 cup olive oil
1/2 onion, diced
3 clove garlic, minced
2 celery stalks, diced
1 tsp dried thyme
1/2 cup potato starch or GF flour
8 (6 1/2- oz) cans clams, with juice or 4 dozen fresh steamed clams minced
2 cups cooked diced red potatoes
1 quart half-and-half
3 strips artisanal organic bacon cooked and diced
1/2 tsp sea salt
1 tsp black pepper
3 dashes of your favorite hot sauce
Directions:
Boil potoatoes until fork tender, drain and let cool. Cook bacon, drain and set aside. Saute onion, garlic, celery andthyme in olive oil until onions are transparent. Add GF flour and cook, stirring for 5 minutes. Add clams with juice and cook over medium-low heat for 20-30 minutes. Add potatoes and half-and-half; heat on low. Do not boil or cream may break. Stir in pepper and hot sauce, garnish with bacon and serve.
Notes:
If you want more bacon flavor and aren't concerned about the saturated fat saute the veggies in the bacon fat instead of olive oil. Every once and a while it's ok to be bad with a recipe like this as long as your daily routine is filled with all veggies of the rainbow and low in saturated fat. Remember balance is the key to a healthy happy life!
