Ginger-Lime Vinaigrette

Yields:                                 4 people

 

Ingredients: 

1 tbsp tamari
2 cloves garlic
1" fresh ginger, peeled and roughly chopped
2 tbsp finely chopped celery leaves
Juice of 2 limes
1/4 cup rice wine vinegar
1/2 cup extra virgin olive oil

 

Directions: 

Combine first 5 ingredients in a Vitamix or blender for 10 seconds until the garlic and ginger are pureed. Add the vinegar and oil and blend creating an emulsion.  

Notes:               Can be used on salads or stir-frys
