Glazed Hakurei

Cooking time:            20 minutes

Yields:                                 4 people

 

Ingredients: 

10 Hakurei turnips
olive oil
1 tbsp miso paste (red or white, I prefer red)
2 tbsp water
1 tsp rice wine vinegar
1 tbsp honey
3 scallions

 

Directions: 

Turn oven on 425. Remove the greens from the Hakurei turnips and set aside. Quarter those beautiful royal little turnips and coat with olive oil. Place on tin foil or baking sheet and roast for 10 minutes. Meanwhile in a shallow sauce pan create your glaze by whisking the miso, water, vinegar, and honey over medium low heat. Let the glaze reduce, stirring occasionally,  about halfway while the turnips are roasting. Roughly chop the turnips greens and scallions. When the 10 mminutes has elapsed turn the turnips to roast the other side for another 10 minutes. You know they are done when the turnips to just begin to caramelize on the edges. Remove the turnips from the oven and add them to the glaze. Add the scallions and turnip greens and toss to coat evenly. Serve warm. If you wish you can garnish with more scallions.
