Gluten Free Pesto Pasta

Yields:                    4 people

 

Ingredients: 

Pesto
2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
1/2 cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste

"Pasta"
2 zucchini

 

Directions: 

Put the shredding blade on the food processor. Cut the zucchini lengthwise and feed through the processor turning it into "spaghetti" and place in a bowl. Switch blades to the bottom proccessing blade, add garlic, nuts, cheese, and the oil blend until smooth. Add the basil and process for aprox 1 min. you want to get a beautiful kelly green color with flecks of basil still showing if you process too long it will be whipped and it will have a less intense aroma and taste. Place desired amount over "pasta" and toss gently until well coated. Garnish with sliced cherry tomatoes, parmesean and basil.
