Grain-Free Fresh Nectarine Tart

 

Prep time:                           15 minutes

Cooking time:                 40 minutes

Yields:                                      8 people

 

Ingredients: 

Crust:
2 cups blanched almond flour
1/2 tsp salt
2 1/2 tbsp coconut oil
1 tbsp ground white chia seed
3 tbsp water

Filling:
1 cup organic coconut milk
1 1/2 small nectarines, peeled, halved, pitted and chopped
1 oz chia seeds
1 tsp vanilla extract
3 dates pitted

Topping:
2 nectarines (skin on)
1/2 tsp ground cinnamon
2 tbsp fresh blueberries

 

Directions: 

To make crust:

Preheat oven to 350 degrees. Combine all ingredients and press into a 9" tart plate or pie pan. Set aside

To make filling:

Put all ingredients in Vitamix and mix well. Pour filling into crust. Bake 35-40 minutes, until knife inserted in the center come out clean. Allow to come to room temperature, then cover and chill in the refrigerator or at least 1 hour.

To make topping :

Halve , pit and slice nectarines, sprinkle with cinnamon and toss together. Remove tart from the refrigerator. Line the nectarines slices around the outer edge of the tart then work your way into the center in a decorative pattern.  Place blueberries in the center of the tart and serve.
