Green Rice with Grapes and Pecans
Prep time: 10 minutes
Prep notes: after prepared refrigerate for 4 hours to let flavors marry
Cooking time: 40 minutes
Yields: 8 people
Ingredients:
2 cups long grain brown rice (plain or basmati)
2 garlic cloves
6 tbsp lemon juice
1 tbsp agave nectar
1 tsp salt
6 scallions, whites and light green cut in 1/2
1/2 cup packed parsley, large stems removed
1/4 cup EVOO
2 cups red seedless grapes, halved
1 cup chopped pecans, lightly toasted
Lemon wedges (optional)
Directions:

Fill a large saucepan with 4 cups of water and bring to a boil. Add rice and cook, over medium heat for about 40 minutes or until tender.

Meanwhile, combine the next 7 ingredients in a Vitamix and blend until parsley is finely chopped.

Fold herb sauce into rice, add grapes and refrigerate. Add pecans before serving , can be served warm or chilled.
Notes:
Options-
Chopped or grated lemon zest take from lemons before juicing.
Up to 1/2 cup minced mint leaves added to the herb mixture.
Chopped apple or other fruit in addition to the grapes.
