Green Shawarma Salmon

Cooking time:            15 minutes

Yields:                            4 people

 

Ingredients: 

1 cup cilantro
7 tbsp olive oil
1/4 cup lemon juice
2 garlic cloves
1 tsp ground corriander
1/2 tsp ground cinnamon
1/2 tsp ground cardamom
1/2 tsp ground ginger
salt and pepper
4 salmon fillets

Directions: 

Puree the first 8 ingredients in Vitamix and pat on the filets. Heat a cast iron skillet on medium heat, place 1 tbsp of olive oil in pan and place filets in and pan fry for 7 minutes per side (or until you see the color change 1/2 way up the filet). Serve over rice and a side of veggies.
