Guacamole

Yields:                            4 people

 

Ingredients: 

2 avocados, halved, seeded
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 teaspoon smoked paprika
1/2 medium onion, diced
1/2 jalapeno pepper, seeded and minced
1 Roma tomato, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

 

Directions: 

Scoop out the avocado in a large bowl. Mash with the back of a fork until mostly smooth. Add the lime juice, salt, cumin, cayenne, and smoked paprika and mix to incorporate. Add the remaining ingredients and fold. Refrigerate for 15 minutes to let the flavors marry. Serve with Blue corn chips or Organic chips. 

Notes: 

In a pinch the fresh ingredients can be swaped with dry spices from the pantry. I use chipotle powder instead of the jalapenos when doing so cut down on the smoked paprika. Remember when converting fresh ingredients to dry that 1 tablespoon of fresh equates 1 tsp of dry.
