Hash Browns

Prep notes: If you are making for small children you may want to omit seasonings
Cooking time: 30 minutes
Yields: 1 people
Ingredients:
1 medium potato per person
1/2 of a medium onion
1/2 tsp garlic powder
olive oil
sea salt
Directions:
With a grater or food processor shredder grate the potato and onion. I leave the skins on for extra nutrients but feel free to peel if you find it more aesthetically pleasing. Preheat a non-stick skillet on medium. Meanwhile take the mixture and squeeze the excess water out to insure crisp hash browns. Then toss in the garlic powder and create patties aprox 1/4 thick and place into the warmed skillet. Cook for aprox 10 minutes or until you see the edges starting to dry out. Add a small drizzle of olive oil around the patties and swirl the pan this will slightly fry the hash browns to a golden brown. Flip and repeat on the other side. As you plate sprinkle with a small amount of salt.
