Herbed Celeriac Mash

 

Prep time:                      10 minutes

Cooking time:              20 minutes

Yields:                               2 people

 

Ingredients: 

1 Celeriac, (softball size) peeled and chopped
2 broth cubes (chicken or vegetable)
1 medium onion, diced
2 tbsp Extra Virgin Olive Oil
2 cloves garlic, diced
1 tbsp fresh thyme
grated peel of 1/2 lemon

 

Directions: 

Fill a large sauce pan 1/2 way with water, place in diced celeriac and boil for 15-20 minutes or until very tender. Meanwhile in a saute pan, saute onions for 3 minutes with olive oil over medium low heat. Add the garlic and cook 3 more minutes. When the celeriac is tender drain water, add broth cubes, and mash or whip with a blender until smooth. Add the onion garlic saute, thyme and lemon peel. Place in a bowl and garnish with a sprig of thyme and lemon peel twist. 

This warm comforting dish can be used as a main dish, as a base under green beans or roasted veggies. To bring out even more nuttiness roast the garlic for 20 minutes in the oven and add to the mash. 

Notes: 

To peel the celeriac a paring knife is best as the knobs of the root make it difficult for a vegetable peeler.
