Italian Rice with Snow Peas

 

Prep time:                          15 minutes

Cooking time:                  25 minutes

Yields:                                   4 people

 

Ingredients: 

1/2 pound snow peas, trimmed and cut into 3/4" pieces
2 tbsp olive oil
1 tbsp green onion, minced
2 cloves garlic, minced
1 1/2 tsp grated lemon peel
1 cup Arborio rice
2 cups stock (chicken or vegetable)
1/3 cup lemon juice
1/2 cup fontina cheese, shredded

 

Directions: 

Warm oil in a large saucepan over medium low heat. Add onion, garlic and lemon peel. Cook until soft, stirring ocassionally, about 3 minutes. Add rice and stir until coated with oil about 2 minutes. Mix in stock, lemon juice and salt. Bring to a boil. Reduce heat to low cover and cook until rice is tender, about 25 minutes. Add snow peas and fontina.  Serve and enjoy!
