Jeweled Quinoa

 

Prep time:                              10 minutes

Cooking time:                     20 minutes

Yields:                               4 people

 

Ingredients: 

3 carrots, sliced into 1/4" coins
1 onion, chopped
3 garlic cloves, minced
1 tbsp olive oil
1 cup quinoa, rinsed
2 cups of broth or water
3" square piece of kombu
1 bay leaf
4 green onions, chopped
2 tbsp dried apricots
2 tbsp dried cranberries or sour cherries
1/4 cup pistachios, chopped
1 tbsp lemon juice
1 tbsp olive oil
1 sprig of mint julienned
2 sprigs of parsley chopped

 

Directions: 

Heat olive oil in a saucepan. Add carrots, onions, garlic and quinoa and sauté for three minutes. Add bay leaf, broth and kombu.

Bring to a simmer and reduce to low. Cover and cook 20 minutes. Remove from heat. Fold in green onions and fruits and cover. Allow to sit for 5 minutes. Stir in pistachios and lemon juice, olive oil and herbs and enjoy!  May be served warm, at room temperature or cold.
