Kale and Chicken

Yields:                                      2 people

 

Ingredients: 

1/4 cup cannellini beans
1 chicken breast, chopped
4 leaves of kale, chopped
5 sundried tomatoes, chopped
1 clove of garlic, diced
1/2 onion, chopped
olive oil

 

Directions: 

Heat a skillet on medium high heat, season chicken and sear on both sides aprox 3 minutes per side. Remove chicken and let it rest on a plate, meanwhile lower heat of skillet to medium, chop onion and garlic and place in skillet along with 1 tbsp oil, add chopped kale and saute until tender. Chop the chicken and add back to the skillet along with sundried tomatoes and cannellini beans. Remove from heat season with Aleppo/red pepper flakes salt and pepper. Plate and drizzle a little more olive oil before serving.
