Lemony Capers with GF Angel Hair Pasta

Cooking time:           20 minutes

Yields:                                4 people



1 lb buckwheat or sorghum angel hair pasta
1 large Spanish onion, sliced thin
12 shiitake mushrooms, sliced
3 cloves garlic, crush and minced
3 large tomatoes, cut into small cubes
2 tbsp capers
2 lemons, juiced
1/4 cup olive oil



While your pasta is cooking. Heat skillet and saute olive oil with onions, mushrooms, and garlic for 3 minutes. Add tomatoes and capers and cook for 5 minutes. Add lemon juice and pasta season with pepper.


If you feel it needs a bit of salt garnish with shaved hard cheese of your liking: parmesean or romano work well. I also like chopped parlsey for additional flavor and color.
