Lentil Soup

 

Prep time:                     10 minutes

Cooking time:            55 minutes

Yields:                                4 people

 

Ingredients: 

2 cups dried green lentils
1 cup dried brown rice
1 onion, diced
1/2 pound spinach, chopped
2 cloves garlic, sliced
2 cups chopped broccoli florets and stems
5 medium potatoes, chopped
8 cups water
1 tbsp extra virgin olive oil
sea salt,, fresh pepper, garlic powder and cumin to taste

 

Directions: 

Bring water, lentils, rice, onion, potatoes to a boil in a large pot. Reduce to low, cover with a tight lid and simmer for 45 minutes. Add greens, broccoli, salt pepper, garlic, cumin and olive oil. keep cooking and stiring until broccoli and greens are done- about 5-10 more minutes.
