Lettuce Wraps


Prep time:                           10 minutes

Cooking time:                  10 minutes

Yields:                                      4 people



1 fennel, diced small
5 small mushrooms, diced
1 tbsp olive oil
8 lettuce leaves
1 cucumber, diced
lemon juice
1/2 avocado sliced
salsa (optional)



In a small frying pan over medium heat, fry the fennel and mushrooms in the oil about 10 minutes. Lay out the lettuce leaves on the counter and put the fennel and mushroom mixture down the center (aprox 1/4 the width of the lettuce leaf), top with cucumber, avocado, a dash of lemon juice and salsa. Roll up the lettuce leaf like a burrito and eat immediately.


An alternate would be to chop the lettuce and combine with the stir-fry and other ingredients in a large bowl and eat as a salad.
