Lime-Herb Rice
Prep time: 10 minutes
Cooking time: 18 minutes
Yields: 8 people
Ingredients:
1 1/2 cups long-grain rice
1 tablespoon olive oil
2 garlic cloves, minced
1 teaspoon kosher salt
Juice of 2 limes
1/2 cup parsley
1/2 cup cilantro
1/2 cup pine nuts
Directions:
1. Bring 3 cups of water and 1/2 a teaspoon kosher salt to a boil. Add the rice, cover, and reduce heat to a simmer. Cook for 18 minutes. Take the lid off and let sit for 5 minutes.
2. While the rice is resting, place the parsley, cilantro, and garlic cloves into the bowl of a food processor. While running the food processor or Vitamix, drizzle in the olive oil and lime juice. Season with the remaining salt.
3. Lightly toast the pine nuts in a pan, making sure not to burn them.
4. Toss the rice with the herb mixture. Stir in the toasted pine nuts.
