Roasted Red

Ingredients:
1/4 cup dried tomatoes
1/4 cup roasted red peppers
1/2 cup walnuts, toasted
1/2 tsp toasted onion powder
1 1/2 tbsp red wine vinegar
2 tbsp olive oil
ground pepper and sea salt to taste
Directions:
Re-hydrate tomatoes in roasted red pepper liquid for 20 minutes. Add all ingredients to Vitamix or blender and blend until well until mixture is incorporated thoroughly and thick. Serve with pita or blue corn chips.
