Beets with Greens


Prep time:                          5 minutes

Cooking time:               35 minutes

Yields:                                   6 people



2 bunches small beets
juice of 1 orange
1 tbsp olive oil
1 tbsp toasted sesame oil
2 tbsp tamari or soy sauce
1 crushed dried chile pepper (optional)
sea salt and pepper to taste



Cut beets off stems. Steam beet roots in a little warm water until tender, 20-30 minutes. Cool briefly, slip off skins, and cut into wedges. Toss with oj, oil, salt and pepper. Meanwhile, cut stems into 3" pieces and coarsely chop the greens; set stems and greens aside in separate piles. Heat sesame oil in a large skillet and saute stems with chile pepper (if using) 2-3 minutes. Add greens and cook, stirring frequently, until limp. Toss in tamari and salt and pepper to taste. Serve beets over a bed of greens.
