Chilled Cucumber Soup

 

Prep time:                        3 minutes

Cooking time:               0 minutes

Yields:                                 2 people

 

Ingredients: 

1 large or 2 smaller cucumbers
2 cups plain yogurt or 1 can of coconut milk
1 clove garlic
1 cup scallions (aprox 6)
1/2 tsp sea salt
1 tbsp olive oil
Fresh pepper

 

Directions: 

Put all ingredients in Vitamix and blend until smooth ( 1-2 minutes)

Chill 2-3 hours before serving.

Garnish with fresh mint or parsley.
