Game Day Footballs

Ingredients:
6 oz shiitake mushrooms
9 oz venison, bison or beef
2 tbsp raw cashews
1/3 cup onion
2 cloves garlic
1/2 tsp chipotle
1/4 tsp ground black pepper
1/2 tsp ground thyme
1/4 tsp mediterranean sea salt
potato starch or flour for dredging
peanut oil for cooking
 
Directions:
If the meat is in steak form cut 1" cubes and place in Vitamix and blend to grind, about 2 minutes on level 3. Add shiitake mushrooms, cashews, onion, garlic and grind for 2 minutes on 8. Add the chipotle, pepper, thymw, and salt blend to incorporate. With two tablespoons shape into quenelle (football shape). Dredge in potato starch to coat, be sure to roll gently to not misshape. In a wok or frying pan heat 1/4 cup of peanut oil over medium heat until hot. Add two quenelle's at a time rolling quickly to maintain shape. Cook until golden. Serve with spicy ketchup.
