Mediterranean Chickpeas
 

Prep time:               20 minutes

Prep notes:                 Soak chickpeas over night

Cooking time:            45 minutes

Yields:                                6 people

 

Ingredients: 

1/2 lb dried chickpeas
1 large onion diced
3 cloves of garlic minced
4 large tomatoes peeled and diced or 1 can of diced tomatoes
2 tbsp of dried rosemary or 1 sprig of fresh rosemary
3 bay leaves
1 tsp of oregano
1/4 cup of olive oil
season to taste

 

Directions: 

Place all ingredients in a roasting pan or clay pot, cover with aluminium foil and put in oven on 350 degrees for 45 min.

Notes:               If using dried chickpeas soak overnight
